Some has "a basement, but no ceiling".
Not all has "a ceiling, but no basement".
To put a better way:
SOME = at least one
NOT ALL = at least one isn't.
Both of these statements are true in the real world:
Some NFL players are men.
Not all NFL players are women.
When we say "some NFL players are men", we're not also committing to the idea that "some NFL players are not men". We're just saying "AT LEAST ONE player in the NFL is a man." If it turns out that 100% of the players are men, we haven't lied. 100% of players is definitely at least one player.
In conversation, when we use "some" or "most", we are insinuating that there are exceptions. But the strict meaning of 'some' is 'at least one'. The strict definition of "most" is "more than 50%".
So "most" is also a word that has a basement but no ceiling.
It's true to say "Most humans were born on Earth" or "Some humans were born on Earth" or "Not all humans were born on Mars".
"Not all A's are B" = Some A's are not-B
It is true to say "not all humans were born on Mars" because "at least one human was not-[born on Mars].
