I get it. But yet there's still no reason to miss this question. A couple of things...
First, the LSAC took over the responsibilities for writing the LSAT in 1991 starting with PT1. This is only PT3, they hadn't had very much time to get their language straight--they're much better today than they were back then.
Second, the question doesn't ask for a supported inference like the "rolling pin" question (PT4, S1, Q22), but asks for an answer choice that most helps to explain the apparent discrepancy. For Must be True questions, we need to look out for answer choices that are not quite supported. But for Strengthen, Weaken, and Explain questions, the bar is much lower--it only needs to "help" explain.
Answer choice (B) helps to explain because it shows how non-dairy lighteners can raise cholesterol.
Incorrect Answers
(A) warns about saturated fat, but doesn't give us the reason why. This doesn't show non-dairy lighteners could raise cholesterol.
(C) is out of scope. The stimulus is about non-dairy lighteners, not light cream.
(D) is out scope. The stimulus is about non-dairy lighteners made from coconut oil.
(E) is great, but how do these cholesterol free products raise one's cholesterol.
