Is the reason (A) is incorrect because of the last part, which states that the enzyme itself evolved (rather than the photosynthetic mechanism)? Otherwise, the first part of this answer option seems more appealing, as (B) completely skips the majority of the first paragraph. Is this a problem at all?

Bingo. And this flaw in (A) is much worse than (B)'s leaving out the introductory paragraph.

As for the others:

(C) talks about two solutions when we only are given one.

(D) is wrong both in that it skips the whole evolutionary part and makes the conclusion about other plants that "may" be used when we're told that they ARE used.

(E) brings in a debate about the biochemical reaction, but this isn't debated. The biochemical process is presented as fact in the passage, not as a controverted point.
