The key phrase for both of these blanks is "illusory orderliness." That first word, "illusory," implies that the orderliness isn't real (and that the "chaos" we'll get to later is real. There's no way you would "explore" a fake orderliness (it simply doesn't make any sense). You also can't really "demystify" an illusory orderliness. That would mean "clarify or make it easier to understand." But how can you make orderliness easier to understand? The correct one here is "conjure for." You would want your son to have an orderly life, even if it was fake.
The second blank contrasts with the first. We know he is making the world seem orderly for his son, but in reality, its chaotic. He wouldn't dissipate or escape it (that's what he's doing with his son!), so it needs to be the opposite. He "acknowledges" the chaos when he's alone.
