There is a standard deviation of about 50 points from last MGMAT CAT to official test. You're more likely to be at or close to your MGMAT scoring range if you took the practice CATs under 100% official conditions, including essay, IR, length of breaks, etc.
If you skipped the essay and/or IR, if you took longer breaks than allowed, if you used the pause button, etc, then it's more likely that your practice test scores are artificially inflated and, as such, more likely that your real test score will drop.
Given your range of scores, I'd say that you're most likely to score in the high 600s, but if you did deviate from official testing conditions, then expect a lower score.
Also, three other circumstances can lead to score drops on test day: burnout / mental fatigue (from doing too much in the last few days), timing mismanagement, and significant test anxiety.
