In my opinion it's modyfying Protien. Is that correct? I believe the this emphasize the "Last Thing" concept.

Look here, where we've answered basically all of these already.

Remember that the Last Thing concept is meant to be used for relative pronouns (like 'that', 'which', etc.), and should not be carried over indiscriminately to ALL modifiers.
