I signed up for my online account using the information in my Number Properties Manhattan GMAT book. Online, I can only see the question bank for Number Properties.
However, I have purchased all of the other Manhattan GMAT books - how can I register those books so that I can see their online question banks as well?

Registering your remaining books should be the same as registering Number Properties. To register the remaining books please visit this website: http://www.manhattangmat.com/access.cfm and follow the instructions.
Note that online access is non-transferable; this means that only new and unregistered books will grant you access to online content.
