You're showing some nice improvement on verbal so far. Quant isn't moving much. Is there some obvious explanation for that? Have you been spending more (or most of your) time on verbal?
Have you been taking your CATs under 100% official conditions, including essays and length of breaks? If not, your score could be artificially inflated, so it's important to know that. Your most recent score was 680 and you said you wanted to score in the mid-700s (which I'll interpret as 750), so that's a 70-point jump, assuming your current score is not inflated in any way. That's a lot in a month - most people would need more time.
(Is there a particular reason why you need such a high score? The very best / top schools have an average score somewhere around 720, and the GMAT is what we call a "threshold" data point - that is, if you get above a certain threshold, then they'll typically say "okay, the GMAT's fine" and then they'll use other parts of your application to decide whether to actually admit you.)
At the end of your course, you can request a Post Course Assessment from your teacher, assuming you've taken 3 CATs under timed conditions. Your teacher will look at some of your tests (usually the two most recent, unless you took them under very non-official conditions somehow) and advise you as to what s/he thinks you need to do in the remaining time you have before your exam.
Now, let's get to what I think is the most important statement in your post. You said you've been studying a lot but feel like you haven't been improving as much as you would like. Why do you feel like you haven't been improving enough? Do you feel like it has been hard to memorize a bunch of things? Do you feel like your test scores haven't been going up as fast as you would like? Etc.
It's not unusual for test scores to go up more slowly at first - you're learning a ton of material and it takes a while to "put it all together." But I'm also noticing that your quant score hasn't moved much. Do you have any timing problems at all? That can often make your quant (or verbal) score stagnate.
