Best way to make problem sets

Hi everyone! What is your methodology in creating your own problem sets? I'm leveraging the OG Problem Set Guide to help facilitate which problems I'll be doing and getting a good mix of all sections, but was curious how you all were creating your own set of 8-12 problem sets, and ensuring you're getting a good variation (difficulty, subject, etc.)
